Someone told me that they read in consumer reports that carrots are healthier when cooked. Is it true?

Carrots, one of the most popular vegetables, have many health benefits. This vegetable is most recognizable in orange, but can even come in other colors like purple and yellow. Carrots are very good for the human body for many reasons. First, they help our eyes. Second, they can help prevent cancer and other serious diseases. As an antioxidant, carrots fight off harmful free radicals. Third, they can help our hearts and blood pressure, as they contain many vitamins and minerals, in specific, potassium, which helps maintain blood pressure. Lastly, carrots are good for us as they contain fiber, fiber helps one stay at a healthy weight, lowering chances of disease. As carrots have many benefits, many debate, how should they be cooked? Many enjoy eating carrots raw while others enjoy eating carrots cooked. But, the healthiest way to eat carrots is by cooking them. Consumer reports state, the human body has an easier time absorbing the carotenoids in carrots if you eat them cooked rather than raw (WebMd). According to Live In Home Care, “Researchers found that boiling carrots until tender increased the concentration of carotenoids by 14 percent.” Cooking breaks down the vegetable’s cell walls, making its nutrients more available. While carrots are more nutritious cooked, it is important to be mindful of how you cook them. Boiling vegetables can leach out nutrients, and what you cook them in can add calories. While some prefer raw carrots, if one is looking to eat a type of carrot with the most health benefits, they will choose a cooked carrot.

The claim that carrots are more nutritious when cooked is true. Carrots have cancer-fighting carotenoids in them and these carotenoids concentration levels increase by 14% when boiling. However, frying carrots causes these carotenoid levels to decrease by 13%. According to the Heart Research Institute, carrots also “support bone growth, vision and the immune system.” The website provided, Consumer Reports, is a non-profit that is focused on spreading truth, transparency, and fairness. Therefore they are a reliable source. In order to confirm this, I did a google search and found that the Heart Research Institute wrote a very similar article. Both of these websites are reliable sources and have the same information on carrots, making this true.

The claim that carrots are healthier cooked is true. When carrots are cooked, it becomes easier for your body to process the nutrients. This is not true for all vegetables but applies to a few like tomatoes or eggplant. This happens to carrots because as you cook them, they release high levels of beta-carotene which then becomes vitamin A. While uncooked carrots contain this as well, the cooking process increases the amount. This vitamin helps strengthen your immune system as well as support bone growth. I found this information on the website Eating Well, a reliable site all about healthy foods and how to eat a more balanced diet. They got their information from registered dietitians such as Jamie Nadeau (RD, LDN). Other information from well-known food websites also points to the same conclusions, including the Heart Research Institute.

It has been found that cooked carrots have more beta-carotene than raw carrots. Beta-carotene is a substance that the body converts into Vitamin A, supporting bone growth, vision, and the immune system, according to HRI. It is also true that cooking carrots with the skin on doubles the power of their antioxidants. All of these facts can add up to determining that carrots have more health benefits when they are cooked, rather than when they are consumed raw.

Yes, there are indeed so many more nutrients in cooked carrots than in raw carrots, according to the Heart Research Institute. "Cooked carrots contain more beta-carotene than raw carrots, which is a substance called a carotenoid that the body converts into vitamin A,". Tufts Now explains some of the deeper benefits, "which play an important role in vision, reproduction, bone health, and regulating the immune system.". So, in conclusion, cooked carrots are healthier than raw carrots.
